Palestinian za'atar reimagined with the wild heart of Aotearoa. Apostle's Kawakawa & Feijoa Za'atar honours the centuries-old blend - classic tangy sumac and an aromatic herb base - then weaves in ingredients that could only come from New Zealand. Dehydrated feijoa adds bright, floral acidity. Native kawakawa brings earthy grassiness and a signature gentle tingle. Toasted seeds add nutty depth. Bold without being overwhelming, complex without being extra. 50g.
Sprinkle over labneh or cream cheese for an instant mezze platter. Toss with roasted kumara, carrots or cauliflower. Mix into olive oil for a dipping sauce with warm flatbread. Just as at home on grilled lamb or avocado toast, roasted fish or a simple tomato salad. Sustainably foraged kawakawa, carefully dehydrated feijoa, seeds toasted to unlock their full potential. Ingredients: Toasted sesame, oregano, feijoa (8%), sumac, kawakawa (5%), coriander, cumin, thyme, chilli, fennel, carraway. Contains sesame.
How to use it Keep it simple: good olive oil, this za'atar, warm flatbread. Or get creative: dust it over popcorn, fold it through butter for corn on the cob, crust your fish fillets before pan-frying, mix it into yoghurt-based dressings, or scatter it over hummus. Once you start, you'll find yourself reaching for it instinctively—it's that kind of blend.
The Apostle story began when Lydia and Mat, moved to Paekākāriki in 2018. Mat had been experimenting with sauces, ferments and spice mixes for years, so in an effort to connect with their new community they started selling Mat’s homemade creations at the village market.
Encouraged by an overwhelmingly positive response, they turned their hobby into a business at the end of 2019. Combining Mat’s love of crafting unique sauces with Lydia’s background in graphic design, Apostle was launched.
Using high-quality ingredients like organic apple cider vinegar and cold-pressed, New Zealand rapeseed oil or locally grown chillies and Kawakawa from their garden. Flavours are inspired by the wonderfully diverse culinary landscape of Aotearoa. A melting pot of different cultures and styles of cuisine, blending the very best of local flavours to make every dish one to enjoy.
Drawing on Roman Catholic artwork, Greek Orthodox iconography, Irish illuminated manuscripts and Tarot de Marseille for inspiration, each label is designed to be a miniature work of art, hand-drawn by the remarkably talented Juju. Today, Apostle operates from a dedicated commercial kitchen space, still based on the Kāpiti Coast as a team of three.
The range has expanded to include other sacred sides such as hot honey, chilli oil and kimchi ketchup and is now stocked in more than 200 stores across New Zealand, Australia, Japan and the UK.
But the core focus remains the same: creating small-batch, lovingly crafted products that bring joy to your meals.
