The Shun Premier Paring Knife has a small pointed blade well suited for precise tasks such as trimming and peeling fruit and vegetables.
Handcrafted in Japan, Shun knives feature supersharp blades and comfortable handles that provide excellent support and control.

Each Shun knife blade features a special VG-MAX cutting core that is clad each side with 34 layers of ultra thin high carbon stainless steel (total 69 layers). The Damascus type pattern emerges during the initial hand grinding process and is completed with tiny beads of glass being blasted at the steel to produce a stunning finish.

Shun Premier knives with their thin, lightweight blades are distinguished by their beautiful hand-hammered finish ("Tsuchime" in Japanese) that promotes easier cutting and assists with food release from the blade. 

Comfortable handles suited to right and left handed use are made from durable walnut finish PakkaWood, and capped with a Shun logo engraved stainless steel cap to aid durability and excellent weight distribution.

NSF certified for use in commercial kitchens.  Shun knives are provided with a limited lifetime warranty from manufacturing defects.

  • Handwash your Shun knife with mild dish soap and warm water.
  • Avoid any soaps with citrus extracts, as they can cause rust.
  • Do not use scouring pads, steel wool, or gritty cleaners.
  • Rinse and towel dry immediately, then allow it to air dry briefly before storing.
  • Never leave your knife soaking in a sink or submerged in water.
  • Prevent micro-corrosion by washing and thoroughly drying the blade straight after use.
  • Always dry the cutting edge carefully, keeping fingers well clear.
  • Store safely in a block, sheath, in-drawer tray, knife case, or wooden magnetic holder, never loose in a drawer.
  • Handwashing protects the natural wood handle.

Honing versus sharpening
In order to maximise the life of the blade, regular honing with a Shun steel will be necessary.

Sharpening is the act of taking metal off the blade in order to improve the sharpness, this should only need to be done occasionally depending on how often you use and how you care for your knives. However, weekly honing is wise and will extend the time between sharpening significantly. Honing is the process of realigning the blade's edge to ensure it remains sharp.
