Liz's Epic Kimchi Toastie
Liz first stumbled upon this sandwich filling when she fell into a London cafe one morning looking for breakfast to cure 'the morning after the night before'! Full of sparky kimchi, oozy cheese and a wee hum of gochujang, this will definitely have you perked up and ready for the day!
INGREDIENTS
2 Slices of White Bread - supermarket or artisan, over to you
Gochujang (as much as you like - it's spicy though so a little goes a long way)
Mayo - half and half with the gochujang
Cheese - sliced
Finely sliced tomato
Coriander - a handful, chopped
METHOD
Thinly spread two thick slices of white bread with a mix of gochujang and mayo.
Layer one side with sliced cheese, chopped kimchi, thinly sliced tomato and a hit of coriander.
Sandwich together, then fry in butter over medium heat until golden, melty and irresistible.
