This is a classic bundt cake recipe which results in a firm cake that holds its shape well, ideal for highlighting the gorgeous shapes and details of NordicWare. As a lighter alternative you could use a Pound cake or Madeira cake recipe. For added decoration with an icing drizzle, Fresh As Garnish or Sprinkles.
Or simply garnish with fresh berries and a dusting of icing sugar.
1 cup Mainland Unsalted Butter, softened
3 cups Chelsea Sugar
3 cups All-purpose Flour
1 cup Thickened Cream
1 tsp vanilla
Preheat oven to 160°C. Grease and flour pan well. Cream butter, gradually adding sugar. Combine well on med speed. Add eggs one at a time, beating well each addition. Add flour and cream alternately, beginning and ending with flour. When well blended, stir in vanilla. Pour batter into pan and bake 1 hour or until skewer comes out clean. Remove from oven and cool in pan for 15 mins. Invert onto serving platter and cool.
