185g butter, softened
1 cup icing sugar
1 ½ tsp vanilla extract
2 ½ cups plain flour
Put softened butter, sugar and vanilla in a food processor and whiz until well combined.
Add flour and egg and whiz again until the mixture just comes together.
Tip the mixture onto the bench and mould together, wrap in plastic wrap and chill for ½ an hour.
Roll out on a floured surface and cut with decorative cookie cutters.
Bake on a non-stick tray at 180°C for 10 to 12 minutes or until lightly golden.
Cool on a cake rack.
