Michelle Morfett's Best Ever Vanilla Cupcakes
Mint Cakery's Michelle Morfett has shared what we'd consider the perfect vanilla cupcake for dressing up or down with flavours and icing to suit your event.

INGREDIENTS
Cupcakes:
125 g unsalted butter, softened
240 g icing sugar
2 medium eggs
1 tsp vanilla essence
225 g plain flour
15 g baking powder
200 ml milk
Vanilla Buttercream:
1 batch of Mint Cakery's vanilla buttercream
METHOD
Preheat your oven to 150degC on fan bake.
Cream butter, icing sugar and vanilla together. Add the eggs. Beat to combine and then add all of the milk, flour and baking powder. Beat until just combined.
Line your cupcake tins with cases, this recipe makes 20 cupcakes. Bake for 20mins and check to see if they are cooked - it will depend on your oven, might need another minute or so more but check with a skewer.
Remove from the oven and leave to cool in tins for 5mins and then flip onto racks to cool completely. Make the vanilla buttercream and use a 1A round nozzle in a piping bag and pipe the icing onto each cupcake.
