Liz's Chicken Marbella 'Dump Bag' Method

Terrible name but delicious dinner! Prep ahead to enjoy a flavour-filled favourite with little effort on the day.

INGREDIENTS

4 chicken thighs (on the bone)
2 cloves of garlic, squashed and chopped
1 bay leaves
½ lemon, quartered
½ cup white wine
Handful pitted prunes
Handful large green olives
1 tbsp red wine vinegar
1 tbsp capers (plus a little brine)
1 tbsp fresh oregano leaves, de-stemmed and chopped (or 1 tsp dried oregano)
½ tsp Maldon salt, freshly ground pepper
1 tbsp brown sugar, plus a little extra
1 tbsp olive oil
Chopped flat leaf parsley, to garnish

METHOD

Combine all the ingredients in a large container, Vacuum-sealed or Ziplock bag. Chill flat, then freeze, flat in a single layer.
Defrost overnight in the fridge the day before you want to cook it then, when you arrive home, simply tip the whole bag onto a sheetpan that will fit the ingredients reasonably snugly, topping the chicken with a little more brown sugar and a drizzle of olive oil.

Cook at 180C for 30-40 mins (or until cooked) turning everything a couple of times during cooking. I serve this with baby new potatoes and green beans but a salad would be great too.
