Bramble & Hedge is a boutique nougat & confectionery company selling a range of original high-quality products. Our products include nougat, peanut brittle, Chocolate, Honeycomb, and other sweet treats. The original founder of Bramble & Hedge, Hayley, loved nothing more than spending time in her grandfather’s flower garden.
Years later, during a visit to the Al-Hamidiyah Souk in Damascus, she observed the ancient art of confectionery making. Upon her return in 2009, and taking inspiration from both of these memories, she founded Bramble & Hedge in her small kitchen apartment in Melbourne and began creating products that taste as amazing as they look.

The ranges of nougat, peanut brittle and honeycomb are made in small batches using traditional methods and the best ingredients. Hand-decorated with great attention to detail, the confectionery is topped with dried fruits and flowers sourced from the finest growers locally and across the globe. The team at Bramble and Hedge are a passionate and highly talented group of Artisans making sure the innovation and quality of products continue to evolve.
