Make sure your fruit is not green, and cleaned with a damp cloth.
Cut up fruit. Soak in water overnight in your preserving pan. Bring to the boil and boil for 20 minutes occasionally stirring. Add sugar and boil for a further 40 -50 minutes until reaching setting consistency. Test by placing a teaspoonful on a saucer and leave on cold bench for a couple of minutes. If you can run your finger through the middle and it remains separated then it is ready. Remove from heat and let sit for 10 minutes. Wash and steralise your jars. Place in jars, seal and enjoy!
