Liz's Roasted Tomato Sauce
This should actually be called 'Liz's All-Purpose, Super Easy, "Where have you been all my life', Does Everything Roasted Tomato Sauce for Lazy People' recipe! Because it is and it does. Basically grab your ingredients, chop them, throw them into a large bowl with oil, seasonings and fresh basil then onto a sheet pan and into a hot oven. Couldn't be simpler.
INGREDIENTS
2kg ripe, juicy tomatoes (any variety, or a mix, will work here), halved, or quartered if large
2 red onions, peeled and sliced roughly into wedges
6-10 large cloves of garlic, unpeeled
1/4 cup olive oil
Salt and Pepper
A big pinch of chilli flakes (optional)
Fresh basil leaves, a handful or so
METHOD
Preheat oven to 200C. Place an oven rack in the top third of the oven for maximum heat (but not right up under the grill).
Place tomatoes, onion slices/wedges, garlic cloves and seasonings (S&P, chilli, basil) into a large bowl. Add the olive oil and gently mix through. Spread out in a single (ish) layer in a large sheet pan or a couple of roasting tins. Roast for 30-40 mins - you're looking for slightly blistered/ tomatoes and onions that have started to collapse.
Remove from the oven and cool slightly. Put the tomatoes etc and their liquid through a mouli or use a stick blender to puree (or leave them chunky) and tip the whole lot into a saucepan. Reduce:
- slightly for a thin sauce (a home made passata if you will) to add to Italian type dishes like casseroles, risotto, soups etc
- a little more for a fresh tomato pasta sauce
- more again for a pizza sauce or bruschetta topping.
Freeze in bags or glass containers to add a gorgeous summer zing to heavy winter dinners confident in the knowledge that you are indeed a 'domestic god or goddess'!
