Milly's Small Batch Citrus Cordial
Small batch Orange, Lemon and Lime Cordial makes a terrific, refreshing summer drink and a perfect Christmas 'gift from the kitchen'. Fill a glass with ice cubes and pour in a little cordial. Add cold water, sparkling water or soda water. Stir well to mix and enjoy. Makes 4 x 250ml bottles (1 litre). Begin the recipe the day ahead.
INGREDIENTS
Finely grated zest and juice of 2 oranges
Finely grated zest and juice of 1 lemon
Finely grated zest and juice of 1 lime
600g caster sugar
½ tablespoon citric acid
METHOD
Put all the ingredients in a saucepan with 500ml boiling water. Put over medium-low heat, stirring gently until the sugar dissolves.
Remove from the heat, cover and set aside. Once cool, transfer to a glass or ceramic jug. Keep covered and leave at room temperature overnight.
The following day, strain and pour into sterilised bottles and seal well. Keep in the fridge.
Note – the citric acid acts as a preservative and adds some welcome acidic notes. If not using citric acid it is best to use the cordial within 6 weeks.
This cordial freezes really well.
