Lemon Syrup Loaf


150g butter, softened
1 cup caster sugar
2 eggs, lightly beaten
2 cups flour
2 teaspoons baking powder
⅔ cup milk
zest of 4 small lemons

Lemon syrup
Juice of 4 small lemons
½ cup caster sugar


1. Preheat the oven to 180°C. Grease and line the base of a 21cm x 10cm loaf tin.

2. Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Sift in flour and baking powder and gently fold in together with the milk and lemon zest. Spoon into the prepared loaf tin and place in the oven to bake for 50-60 minutes or until a skewer inserted in the centre of the loaf comes out clean.

3. To make the syrup – Mix together the lemon juice and caster sugar. Pour over loaf while it is still warm.
