Fran Mazza's Afghans

A Kiwi favourite, this classic biscuit is at it's best (in our humble opinion) in Fran Mazza's recipe from "Feed me Feed me". Delicious.

INGREDIENTS

250g butter
½ cup caster sugar
1 tbsp vanilla extract
¼ tsp salt
1½ cups plain flour
3 tbsp cocoa powder
1½ cups cornflakes

Icing:

1 cup icing sugar
2 tbsp cocoa powder
20g butter
3 tbsp boiling water

Toasted whole walnuts, to decorate

METHOD

Preheat oven to 170C. Line a baking tray with baking or parchment paper.

Place butter and sugar in the bowl of an electric mixer and cream together until pale and fluffy. Add vanilla and salt, then sift in flour and cocoa powder and gently mix on low speed just until the ingredients are incorporated. Add the cornflakes and, again, gently mix on low speed until evenly dispersed through the dough.

Roll large tablespoons of dough into balls and place on prepared tray, leaving a 5cm space between. Flatten balls slightly, then place in oven and bake for 15-20 minutes. Remove and cool slightly, then transfer to a wire rack to cool completely.

To make the icing, sift icing sugar and cocoa into a mixing bowl. Melt butter in boiling water, then pour over the dry ingredients. Mix well until smooth - add a little more water if the icing is too thick. Dollop on cooled biscuits and spread out a little with a knife, then top each with a walnut.
