Firecracker Salmon
This is such a great marinade/baste - the sweet heat of the sauce contrasts beautifully with the richness of the salmon. Perfect for air fried fillets but equally good when baking in the oven or on the BBQ.
Marinade ingredients:
1 tbsp soy sauce
1 tbsp grapeseed or other neutral oil
1 fat clove of garlic, finely grated*
1 tsp finely grated, peeled fresh ginger*
2 tbsp Sweet Chilli or tomato sauce
1-2 tsp Sriracha (more or less depending on how hot you like it)
Salt and pepper to taste
1 tsp maple syrup (or brown sugar)
Sesame seeds, a tbsp fresh herbs, a squeeze of lime juice - optional, for garnish
In a small bowl, whisk together all the marinade ingredients except the sesame seeds. Tip over salmon fillets (this is enough for 4 portions of salmon) then marinate for a few hours in the fridge if you can.
Preheat your air fryer to 210C and air fry for approximately 7-10 mins or until cooked to your preference. We like to cook this hot and fast and at a high heat so we get some char on the outside whilst retaining deliciously tender, moist flesh inside. Serve sprinkled with sesame seeds or fresh herbs or a squeeze of lime juice (or all three!) or nothing. The choice is yours!
