About 100g Japanese green tea noodles, cooked
2 Handfuls shredded cos lettuce leaves
1 Carrot, sliced lengthwise, then cut into thin strips
4 Spears asparagus, trimmed and steamed
A few snow peas and sugar snaps, trimmed and steamed
1-2 Radishes, trimmed and quartered
¼ Avocado, sliced
Good handful Watercress
1 Tablespoon seed mix (such as poppyseeds, linseeds, sunflower and pumpkin seeds)
1 Tablespoon Apple cider vinegar
3 Tablespoons Olive oil
Salt and freshly ground black pepper, to season
Runny honey, to sweeten
Whisk the vinegar and oil together in a bowl. Season and sweeten with honey. (A little chopped red chilli is good here too if you like a kick of heat).
Toss through salad ingredients and serve.
