Smokey Chicken Burritos Recipe


INGREDIENTS

1Tbls canola oil
2 cloves garlic
1tsp smoked paprika
½ tsp chilli powder
½ cup water
400g can diced tomatoes
Finely shredded lettuce
100g cheese, grated
12 soft floured tortillas
1 large onion
500g chicken thighs
1tsp ground cumin
½ tsp oregano
1tsp powdered chicken stock
½ tsp salt/sugar
1 carrot grated
Sour cream

METHOD

Heat oil.  Chop onion into quarters and then slice, crush garlic and add to hot pan and cook until soft.  Add sliced chicken, cook thoroughly then add oregano and spices.  Cook for further 2 mins.  Add ¼ cup stock, tomatoes and their juice, salt and sugar and cook for approximately 10 mins.

Assemble burritos in order of:  chicken mix, lettuce, carrot, cheese and sour cream.

Wrap and enjoy.
