Homemade Pork Dumplings from The Cafe

As featured on Thursday the 16th of May's Show


1 packet of fresh wrappers (60 pieces)
1 shallot, finely chopped
200g ground pork mince
1/8 cabbage finely chopped
Salt and Pepper
Coriander, ginger, garlic - all chopped finely
2 Tbsp of soy sauce
Oyster sauce
Rice vinegar (or sake)
A touch of cornflour or potato starch
Chilli Sauce to serve


Filling Combine all the prepared ingredients from the list and use your hands to thoroughly combine them.
Fill Take a teaspoon of mixture and place in the centre of the wrapper. Wet your fingers and run around the outside rim of the wrapper. Fold into a half moon shape and pinch together - you can keep them simple or pleat them!

To Cook Tip enough oil into your frypan to cover the base. Add ¼ cup of water also. Now turn on the heat and gently put the rows of dumplings into the oil and water. Cover with a plate or a lid and cook for 5 minutes. (You are steaming to cook the filling) Once your dumplings are steamed, carefully remove the lid and allow the water to evaporate. The dumplings should now get a lovely caramelised base on them as they finish cooking in the oil. Remove with tongs to paper towel and repeat with the rest of the dumplings
