Put the peanut butter, honey and vanilla in a bowl and mix to combine. Add the coconut flour and mix again. Place the mixture in the freezer.
Melt the chocolate (either using a bowl placed in a saucepan of hot water or in the microwave).
While the chocolate is melting, remove the mixture from the freezer and roll into balls. Place the balls back in the freezer for a further few minutes.
Drop the peanut butter balls into the chocolate and use a couple of teaspoons to coat the balls. Remove and place on greaseproof paper, and sprinkle immediately with the topping of your choice. Place in the fridge to set. Top with freeze-dried raspberries or a sprinkling of sea salt. Enjoy!
