Nordic Ware Gingerbread Village

INGREDIENTS


225g butter
225g soft brown sugar
225g black treacle
290mls milk
340g plain flour
1 tbsp ground ginger
1 tbsp ground cinnamon
2 tsp baking soda
2 room temp eggs, beaten

METHOD

1. Heat oven to 150C and grease and line 27x15cm loaf pan.

2. Melt butter, brown sugar and treacle over a medium heat, stirring, until butter is melted and sugar dissolved. Remove from heat and add milk. Cool to room temperature. When cooled, add beaten eggs and mix.

3. Sift flour, spices and soda into large bowl. Add wet mixture to dry mixture and whisk to just combine – don’t overmix.

2. Bake for about an hour or until skewer comes out clean. Cool in the tin. Cuts better the next day.
