Pre heat oven to 180°C
Place dates in a bowl with the boiling water. Let stand for 30minutes
Sift dry ingredients together
Beat butter and sugar together, add eggs. Stir in date mixture and sifted dry ingredients. Mix well and add nuts.
Spoon mixture evenly into 2 lightly greased nut roll tins. Place lids on tins. Stand tins on a baking tray. Bake for approx 1 hour or until the rolls are cooked when tested. Let rolls stand in tin with lids on for 10 minutes before turning out on to wire rack to cool.
*Tip – when cutting dried date and fruit you will find the fruit will stick to your knife. To avoid this problem rub or spray a thin coating of vegetable oil on your knife before you start chopping. The fruit won’t stick to the blade.
