Banana Chocolate Chip Muffin Recipe


INGREDIENTS

60g Unsalted Butter
110g Chelsea Sugar
225g Chelsea Golden Syrup
1 egg
340g All-Purpose Flour
15g Baking Powder
7g Baking Soda
150ml warm milk, not quite boiling
2 bananas, mashed
90g Dark Chocolate Chips

METHOD

Cream butter, sugar and golden syrup together until pale. Add egg and mix well. Add sifted flour and baking powder. Add baking soda to the warmed milk and then add the milk to mixture. Mix well. Lastly add bananas and chocolate chips. Divide evenly into muffin tray and bake at 170°C for 20 – 30 mins.
