From the author: "When my publisher suggested this book might be called Pasta Masterclass, I wasn’t convinced I could claim to be a master of pasta-making at all. Of course, I am a pasta chef, but I feel as though I still have so much to learn; that there are so many other people out there who have wonderful skills and knowledge to share. I think the word that really describes me best is a pasta ‘enthusiast’. Enthusiasm has a habit of being infectious, and I’m always happiest when I can inspire other people to talk about pasta, to make it, cook it and eat it.

About the author: Mateo Zielonka, aka The Pasta Man (dubbed so by his Instafans), is chef at 180 The Strand, a collaborative studio and arts space with Soho House. He also heads up The Store X kitchen with his own pasta space. Polish-born, he has worked in London for 6 years including time at Padella and Polpo. He also teaches pasta classes.
